10 Minute Waffle Ice Cream Sandwiches Your Kids Will Love

Waffle Ice Cream Sandwiches

You know what makes summer even better? ICE CREAM!

Quick question- if you make an ice cream sandwich out of waffles, does it automatically get indoctrinated into the “Breakfast” category? Or is it still a dessert . . . you know, because of the ice cream?

Either way, you have GOT to make this refreshing and unexpected hybrid treat for yourself. Between the cold ice cream center, the fluffy waffle sides, and the nutty, chocolaty crunch of the topping, there is nothing I don’t like about this treat! And, the natural dents in the waffle quarters created the perfect opportunity to turn an “ice cream sandwich” into an “ice cream sandwich sundae” with some chocolate syrup drizzled on top! (Which, yes, made things messy; but in a delicious, totally-worth-it kind of way.)

Waffles
 2 Eggs
 2 cups Flour
 1 ¾ cups Milk
 ½ cup Oil
 1 tbsp Sugar
 ¼ cup Baking powder
 ¼ tsp Salt
 ½ tsp Vanilla
Ice Cream Sandwich
 ½ gal Ice cream, flavor of your choice
 Chocolate, melted
 Pistachios, finely chopped
 Peanuts, finely chopped
 Sprinkles, optional

Beat the eggs with a whisk until fluffy. Add all the other ingredients and mix until just combined and smooth.

Heat the waffle iron and spray with oil. Pour enough waffle mix over iron to fully cover the bottom grid, then close the lid. Periodically check your waffle and remove from heat once it's golden brown. Allow to cool completely.

Once the waffle is fully cooled, divide it into quarters along the thin lines left by your waffle maker. Scoop the ice cream flavor of your choice on top of one of the waffle quarters. After the waffle is covered in ice cream, set a second quarter on top and immediately place in the freezer. Repeat with remaining waffles.

After the ice cream sandwich has fully hardened, melt some chocolate in a bowl with a wide mouth. One at a time, dip the ice cream sandwiches into the melted chocolate. Immediately roll the chocolate in whatever nuts or sprinkles you want. Repeat with remaining ice cream sandwiches. Either serve immediately or return to the freezer before the ice cream melts.

This recipe is perfect for the whole family! It was blast and a half to make in my kitchen and I’ve got a good feeling you’re going to love making it in yours.
