Vanilla Sugar Cookie Sandwiches

This all started with a sugar cookie recipe.

It was a beautifully simple recipe that added instant pudding mix to the batter to keep the cookies moist and had lots of sprinkles for an air of whimsy and fun. So I made the cookie dough, rolled them into tiny cookie balls, and popped them in the oven. They rose and settled into stunningly perfect sugar cookie rounds. I was so excited as I took them out of the oven. I couldn’t wait to try them. My anticipation was mouthwatering as I took a bite of one of the freshly baked cookies… and was disappointed.

I don’t know why. The rest of my family thought the cookies were a slam dunk, but I thought they were a little dry- which was the exact opposite of what I’d been expecting. So, I went rouge and decided to “enhance” them with a lemon cream cheese frosting. But I still had a problem. My favorite thing about the cookies were all of the festive sprinkles in them. The last thing I wanted was to frost them and hide their best attribute. So, I created the cookie sandwich. And, since my cookies were already pretty crazy looking, I decided to embrace the eccentric turn the dessert had taken: I proceeded to dunk half of each frosting-cookie sandwich in white chocolate and then dust the tacky chocolate with even more sprinkles.

The end result may be hard to wrap your mouth around, but if you can manage it, it will be well worth the strain. The lemon cream cheese frosting adds some moisture and fat to the sugar cookie, transforming it into a magical delight. And the citrus frosting both compliments and elevates the best features of the sugar cookie. Technically, the white chocolate candy coating is purely for aesthetic reasons, but it subtly adds warm, chocolaty undertones to the ensemble.

Did I make things more complicated for myself?

Totally.

Was it worth it, to go full “crazy culinary chef” on the perfectly edible (albeit horribly ordinary) sugar cookies?

Totally.

Sugar Cookies
 ¾ cup Butter
 1 cup Sugar
 1 Egg
 1 Egg yolk
 1 tsp Vanilla
 1 tsp Baking soda
 ½ tsp Salt
 3.50 oz Instant vanilla pudding mix
 2 cups Flour
 ½ cup Sprinkles
Lemon Cream Cheese Frosting
 8 oz Cream cheese
 4 cups Confectioners' sugar
 1 tsp Lemon extract or juice
 2 tbsp Milk
Garnish
 White chocolate, melted
 Sprinkles

Sugar Cookies

Preheat the oven to 350 degrees.

Beat the butter and sugar together in a large bowl for two minutes. Add the egg, egg yolk, vanilla, baking soda, and salt to the bowl and stir until well mixed.

Add the pudding mix and flour to the wet ingredients and mix until batter is homogenous and smooth. Fold the sprinkles into the batter. Remove two tablespoons of batter at a time and roll into small balls. Place the little cookie balls on a parchment paper lined baking sheet and bake for 8-12 minutes. The cookies should be barely set and perfectly circular. Allow to cool on the pan for at least 3 minutes.

Lemon Cream Cheese Frosting

Beat the cream cheese smooth. Add the confectioners' sugar, milk, and lemon extract. (Add lemon extract to taste, using more or less than the recipe demands depending on personal preference.) To adjust the consistency, add either more milk or more confectioners' sugar to the frosting. Ideally, the frosting will be stiff enough to hold its shape when compressed between cookies.

Take two cooled cookies of matching sizes and on the flat side of one cookie, spread lemon cream cheese frosting. Press the second cookie onto the exposed frosting. Place the sandwich in the freezer for a few minutes to set the frosting.

If desired, melt white chocolate in a small bowl in the microwave, taking care to stir in 30-60 second intervals to keep from burning. Once melted, dip one half of the cookie sandwich in white chocolate and then set on a wire rack. Garnish the tacky chocolate with additional sprinkles and allow chocolate to set completely before serving.
