Valentine’s Day Cake Truffles

I had some cake leftover from the Valentine’s Day Cake Roll recipe and it just so happened that I made too much pink frosting for the same recipe. So, rather than throwing them out, I threw together this impromptu truffle!

Ingredients
 1 Box Cake Mix (baked and cooled)
 Pink Frosting
 White Chocolate Wafers
 Pink Chocolate Wafers

Crumble the cake into crumbs using your hands or a food processor. Add frosting to the batter until it holds its shape. Once you've achieved your desired consistency, roll roughly 1 1/2 tablespoons of batter into balls. Repeat with the remaining "dough" and freeze the truffles until they're firm. In separate bowls, melt the white and pink chocolate in the microwave. Remove the truffles from the freezer and set on a wire rack.

Chocolate Coating and Garnish

Spoon either pink or white chocolate over the truffles, then tap the wire rack on the table to get a smooth surface. Once all the truffles have been covered and the chocolate has set, scrape any remaining chocolate into a small plastic bag, or melt additional chocolate and scrape into the bag. Trim one of the corners off the bag and then, in a smooth motion, drizzle chocolate over the truffle to garnish. (If the truffle has a pink coat, I recommend choosing the opposite color chocolate to garnish; but it's your kitchen- make your own rules!) Allow chocolate to set before serving.
