Unicorn Cupcakes

I used a kit to make it super easy, but the end result is still worth sharing. While technically I might be cheating, using a straight-out-the-box unicorn kit, but wow. Can I just say: My life was incredibly simplified by making this “compromise.” Just frost and pop the eyes, ears, and horn on to the cupcake. Then, just decorate the mane and forelock with some pastel frosting and you’re done! All that’s left to do with these adorable- and totes magical- cupcakes is eat them.

 1 box White cake mix
 Vanilla frosting
 Red food coloring
 Milk, for smoothing the frosting (optional)
 Purple food coloring
 Blue food coloring
 1 Unicorn decoration kit

Make the cake mix following the directions on the box. Pour into a cupcake tin lined with cupcake liners and bake until fully cooked. Remove from the oven and allow to cool completely.

Mound the frosting on the cooled cupcakes. Then dip an offset spatula into a glass of milk before running it over the frosting to achieve a super smooth surface. (The milk both keeps the frosting from sticking to the utensil and makes the frosting itself very malleable.)

Divide some vanilla frosting between three different bowls. Add purple food coloring to one of the bowls. Add blue food coloring to the second bowl. Add just enough red food coloring to the last bowl to achieve a pastel pink color. Scrape the different colored frostings into different piping bags lined with different piping tips. (You want to make sure the openings on tips you choose are smaller, to keep the proportions of decorating a cupcake.)

Place a unicorn horn in the top center of the cupcake. Place two of the eye sprinkle on the frosting below the unicorn horn. Using the different bags of frosting, decorate a forelock and mane around the unicorn horn and the back side of the cupcake. Place two of the ear candies in the decorated mane area.
