Stuffed Caramel Apple French Toast

If you’re a fan of apple pie, this will become your new favorite breakfast! It all starts with a thick cut of bread that gets stuffed with a homemade apple pie filling. Then the stuffed bread gets soaked in a sweetened mixture of heavy cream, eggs, and cinnamon. Finally, the French toast gets cooked until everything is warm and smells like cinnamon in an apple orchard! Maybe I’m embellishing… but maybe not. The only way to know for sure is to make it yourself and find out!

French Toast
 2 Slices Thick-Cut White Bread (2" thick slices)
 2 Eggs
 ½ cup Heavy Cream
 1 tbsp Sugar
 1 tsp Vanilla
 1 dash Cinnamon
Apple Pie Filling
 2 ½ tbsp Butter
 2 Apples (peeled, cored, and finely chopped)
 2 tsp Cinnamon
 1 tsp Vanilla
 2 tbsp Brown Sugar
 1 tbsp Lemon Juice
 1 dash Salt
Garnish
 Whipped Cream
 Caramel Sauce

French Toast

Using a serrated blade, cut a hole in the center of the bread, creating a pocket. (I found that it worked even better if you cut the edges at the top to make more of a taco shell shape than a pocket. But this way you have options.) In a shallow dish whisk together all of the ingredients; set aside.

Apple Pie Filling

In a medium sized saucepan, melt the butter. Add all the ingredients to the pan and cook until the apples have softened, stirring often. Remove from heat and spoon the apple mixture into the pocket created in the slice of bread.

Cook and Serve

Set stuffed toast in a dish (one dish large enough of two French toasts or two dishes, one for each individual "sandwich") and pour the heavy cream/egg mixture over the bread. Let the bread sit for roughly 10 minutes, so the mixture has a chance to soak in. Melt some butter in a skillet and then cook the French toast until the egg mixture on the outside is golden brown. Rotate the bread so that even the edges get cooked (you want be sure that all the egg mixture gets cooked) then serve immediately. Garnish with whipped cream and caramel sauce if desired.
