Strawberry Nutella Cake

This was originally a four layer cake. But then the cake literally started to crumble until its own weight… So this is the end product: a beautiful, chocolate filled, strawberry studded two layer cake! So when you see a Strawberry Nutella Trifle recipe pop up shortly after this gets posted- you’ll know why. But the recipe is so good, I’m not sorry I have to talk about it twice. To assemble the cake, simply take the first layer of rich, chocolate cake and smother it in Nutella. Then cover the Nutella with whipped cream and top off the whipped cream layer with a generous helping of fresh strawberry slices. And repeat. Sound mouthwatering? It is.

 2 sticks Butter
 4 tbsp Cocoa Powder
 1 cup Boiling Water
 1 cup Flour
 2 cups Sugar
 ¼ tsp Salt
 ½ cup Buttermilk
 2 Eggs
 1 tsp Baking Soda
 1 tsp Vanilla
Strawberries
 2 pt Fresh Strawberries (Sliced)
 ¼ cup Sugar
 1 tsp Vanilla
Whipped Cream
 2 cups Heavy Whipping Cream
 2 tsp Vanilla
 2 tsp Cream Cheese
 ¼ cup Confectioners' Sugar
 1 ½ cups Nutella

Preheat the oven to 350 degrees.

In a medium saucepan, melt the butter. Add the cocoa and stir until smooth. Then add the boiling water and let the mixture bubble uninterrupted for 20 seconds; remove from heat and set aside.

In a bowl, combine the buttermilk, eggs, baking soda, and vanilla. In a separate bowl, combine the flour, sugar, and salt. Pour the hot chocolate mixture in with the dry ingredients, stirring until they're halfway combined and the contents are less hot. Add the wet ingredients and continue gently stirring until homogenous. Pour the batter into two greased 9 inch cake pans and bake for 30 minutes or until just set. Remove from the oven, set on a cooling rack, and allow to cool completely.

Combine all of the ingredients together in one bowl and let sit for 15 minutes to macerate. Then drain off any excess juice.

Beat the heavy cream until soft peaks form. Add the vanilla, cream cheese, and sugar; beat until stiff peaks form. Set the first layer of cake on a cake pedestal (or serving platter) then spread half of the Nutella on top of the cake.

Next, spread half of the whipped cream over the chocolate-hazelnut spread and top the whipped cream layer with half of the strawberries. Repeat for the second layer: cake, Nutella, whipped cream, strawberries. Keep refrigerated until ready to serve. (When serving, cut with a serrated knife.)
