Strawberry Mascarpone Yogurt Pie

This was strawberry heaven! The flavors paired perfectly to create a creamy, fruity, healthy, and light summertime delight. Yes, I said healthy. It was a bold decision, but I stand by it- mainly for this reason: there is Greek yogurt in it! Layers of creamy, refreshing yogurt and cheese get alternated with sweetened strawberry slices; and the whole thing rests on a ‘Nilla cookie crust. No oven is required (thank God- it has been so hot and humid lately) and this recipe offers you yet another way to make the most out of strawberry season.

 1 ½ cups 'Nilla Wafer Cookies
 2 tbsp Unsalted Butter (Melted)
 2 tbsp Sugar
 12 Strawberries
 ½ cup Mascarpone Cheese
 ½ cup Greek Yogurt
 ¼ cup Confectioners' Sugar

Crush the cookies in a food processor. Add the butter to the cookie crumbs and stir well. Press the crust mixture into the bottom of a 6 inch pan and place the crust in the freezer for 1 hour. (Or bake at 350 degrees for 7-9 minutes to get neater slices.)

Slice the strawberries and place in a bowl. Sprinkle the berries with the sugar and let sit for 15 minutes.

In a separate bowl, combine the mascarpone cheese, yogurt, and confectioners' sugar. Pour half of the yogurt/cheese mixture into the bottom of the cold crust. Top with half of the strawberries, then repeat. Refrigerate the pie for at least 4 hours. (Alternatively, you can eat it immediately- but you'll need to eat it with a spoon.)
