Spooky Veggie Plate

This is an uber healthy way to correct your sugar overload this Halloween. Carve faces into bell peppers just like you would a jack-o’-lantern, then fill with a variety of your favorite vegetables and dip. If all the veggies get eaten, don’t panic— the bowls are edible! If you pick a delightful ranch dip, then you’ve got vegetable candy sans any caloric guilt.

Ingredients
 3 Bell Peppers
 Celery
 Cucumber (cut into sticks)
 Carrots
 Any Other Preferred Vegetables
 Vegetable Dip of Choice

Prep and Serve

Wash and prepare all the vegetables that go inside of the peppers; set aside. Carve around the stem of each bell pepper and remove the top and seeds. The wider the opening at the top, the more veggies will fit inside the pepper. Slice out little triangles for the eyes and remove. Plan out an opening for the mouth: does your pepper monster have any teeth? Once you've decided, get to work carefully carving the features. After the faces have been created, fill two of the three peppers with the prepared veggies. Spoon the dip into the last pepper until it's full and serve.
