S’mores Stuffed French Toast

Chocolate and marshmallows just made the breakfast menu. Frankly I don’t understand everyone’s obsession with everything s’mores. But I am willing to admit that my inner 7 year old is psyched about eating s’mores of breakfast! And it is pretty satisfying to see the marshmallows ooze and the chocolate melt… ok, maybe I do get it. Starting a thick cut slice of bread and ending with a sugar filled meal that is guaranteed to jumpstart your day, this chocolate smothered recipe does not disappoint.

French Toast
 2 Slices Bread (cut thick, about 2")
 40 g Cocoa Powder
 2 tbsp Sugar
 3 Eggs
 ½ cup Milk
 1 tsp Vanilla
 1 tbsp Butter (for the pan)
Filling
 Dark Chocolate
 ½ cup Marshmallows

Using a serrated knife, cut a line in the middle of the slice of thick cut bread. Stuff a dark chocolate bar and half of the marshmallows into the middle of the bread. In a large bowl, combine the cocoa and sugar; whisk to combine. Add the eggs, milk, and vanilla to the bowl and whisk smooth. Place the two slices of bread in a shallow dish (either one dish large enough for both or two dishes- one for each slice) and pour the mixture over the bread to coat. Let the bread soak in the chocolate mixture for 10 minutes.

Melt the butter in the pan then set one of the slices in the pan. Cook until the chocolate-egg mixture is fully cooked. Flip to cook the other side and then, using a pair of tongs, hold the bread vertically to cook the edges. Repeat with the second slice of bread and serve immediately. Garnish with whipped cream and chocolate syrup if desired.
