Thanks to these delicious flapjacks, s’mores are now a breakfast food! It’s as easy as sprinkling mini marshmallows, milk chocolate chips, and pieces of graham crackers over a freshly cooked pancake. The heat from the pancake melts the marshmallows and chocolate, while the graham crackers add a crisp crunch to the ensemble. And the more pancakes you stack, the more irresistible and mouthwatering the toppings become.
Just an FYI, originally I tried adding the goodies to the batter before I flipped the pancake. Turns out that was a bad idea. The heat from the pan just melted the marshmallows away. Which was downright tragic! So, I highly recommend that you add the s’more ingredients as a topping, once the pancake batter’s been fully cooked. Cause once I adapted my game plan, they came out so good! And besides, who wouldn’t want the first flavor of their day to be the sweet taste of campfires and sunshine?
Combine the dry ingredients. Add the egg, milk, and oil; mix well. Pour a pancake's worth of batter onto a preheated pan. Wait until the pancake has bubbles in it before flipping.
Once the pancake has been flipped, add milk chocolate chips, mini marshmallows, and graham cracker crumbs on the cooked side of the pancake. Remove from heat after the second side's been cooked.
