S’more Blondie Cookies

S’more Blondie Cookies

After we discovered S’more Chocolate Chip Cookies, my brother- who loves all things vanilla- asked me to replicate that recipe using less chocolate. So, this is what I came up with! Instead of using a chocolate chip cookie recipe, I substituted our favorite blondie recipe. Which helped make assembly a breeze, in part because we’ve made it so much, but largely since it uses a box yellow cake mix to jumpstart the baking process. Once the blondie batter had been whipped up, it was just a matter of inventing a vanilla s’more.

The goal was to keep it recognizable as a s’more; but to remove all of the chocolaty flavor that I love, and replace it with vanilla alternatives that my brother would love. The combination that I used was graham cracker, white chocolate, sprinkles (cause everything is more fun with sprinkles), and lastly, the marshmallow. And after assembling the s’mores, all that’s left is to form a cookies out of the blondie batter and set them on top of the s’mores. Then you just bake them until the cookies are fully cooked and you’ve got yourself a vanilla monstrosity. Oh! I’m sorry, I meant a vanilla masterpiece…

Blondie Cookies
 1 box Yellow cake mix
 ¼ cup Oil
 1 Egg
  cup Milk
 ½ cup Sprinkles
 ¾ cup White chocolate chips
S'mores
 10 Marshmallows
 5 Graham crackers, broken in half
 Sprinkles (optional)
 3 bars White chocolate

Preheat the oven to 350 degrees.

Combine the cake mix, oil, and egg; beat until homogenous. Slowly add the milk to the mixture and mix well. Fold in the sprinkles and white chocolate chips.

Set the graham cracker squares down on a parchment paper lined cookie sheet. Break off one row from the white chocolate bar and place on top of the graham cracker. Add some additional sprinkles to the s'more if desired. Then, rip a marshmallow in half and press tight to the bricks of white chocolate and sprinkles.

Shape a flat round of cookie dough, using 2-3 tablespoons of dough. Top the s'more assembly with this flat cookie patty. Bake for 8-10 minutes or until the edges are slightly brown. Remove from the oven and enjoy.
