Sky High Marshmallow Brownies

As with every skyscraper, a firm foundation is key- this dessert is no exception. It all starts with a fudgy brownie base which supports a towering layer of marshmallow meringue. Light, fluffy, and broiled, the meringue gets toasted in the oven until the peaks achieve golden-brown perfection. And if that isn’t enough to convince you, in addition to being delicious, these brownies can very easily be made gluten and dairy free. But however you make them, they’re worth every heavenly calorie.

Brownies
 1 ½ tsp Instant Coffee
 ½ cup Boiling Hot Water
 7 oz 70% Dark Chocolate (or dairy free chocolate)
 ¾ stick Unsalted Butter (or 1/4 cups coconut oil)
 ½ cup Sugar
  cup Cocoa Powder
 3 Eggs (room temperature)
 1 tsp Vanilla
 1 pinch Salt
 1 cup Flour
 1 cup Gluten free flour and 1/4 tsp xanthan gum (optional)
Marshmallow Meringue
 4 Egg Whites
 ¾ cup Sugar
 ¼ tsp Cream of Tartar
 1 tsp Vanilla

Brownies

In a small bowl, combine the instant coffee and boiling water, set aside. In a bowl sitting in simmering water, melt the chocolate and butter together. Allow the mixture to cool until warm. In a medium sized bowl, combine sugar, cocoa, eggs, vanilla, salt, and the melted chocolate mixture. Pour in the coffee and mix well. Add the flour and, if you're using gluten free flour and xanthan gum too, to the batter. Stir until everything is incorporated. Scrape the batter into a greased 8 x 8 pan and smooth out the top. Bake at 350 degrees for 20 minutes or until an inserted toothpick still comes out slightly dirty.

Marshmallow Meringue

Mix all the ingredients together in a large bowl. Set in a bath of simmering water and heat until mixture reaches 140 degrees, stirring constantly. Once the sugar is dissolved, remove the bowl from heat. Beat with an electric hand mixture for 5-7 minutes, until it reaches room temperature and forms glossy peaks. Do not over whisk, or you can lose some fluffiness.Pile the meringue on top of the brownie while it is still in the pan. Using your spatula, create interesting peaks on top. Broil the meringue topping for a few seconds so that the peaks brown- it will legitimately only take a few seconds, so don't walk away from the oven. Allow the brownies to cool slightly before cutting into pieces. Drizzle melted chocolate over the top of the brownie squares, if you want, and enjoy.
