Salted Caramel Chocolate Chip Cookie Bar

Ooey, gooey, salty goodness, resting on top of a chocolate chips cookie.

Chocolate Chip Cookie
 ¾ cup Unsalted Butter (soft)
 ¼ cup Sugar
 1 Egg
 2 ⅓ cups Flour (sifted)
 1 pinch Salt
 ½ cup Chocolate Chip Cookies
Salted Caramel
 1 cup Sugar
 ½ cup Unsalted Butter (room temperature)
 ¾ cup Heavy Cream (room temperature)
 12 tsp Salt
 Melted Chocolate Chips (for garnish)
 Chocolate Chips (for garnish)

Preheat the oven to 350 degrees.

Cream the butter and sugar together. Add the egg and mix well. Then add the flour and salt, mixing until smooth. Fold in the chocolate chips, mixing until well distributed.

Press the cookie dough into a cookie sheet (it should be at least 1.5 inches deep) lined with parchment paper. Bake for 18-20 minutes or until golden brown. The cookie will feel soft coming out of the oven but will firm up once cooled. Allow to cool completely in the pan.

In a saucepan, heat the sugar oven medium heat, stirring constantly to keep the sugar from burning. The sugar will slowly melt and eventually turn into a thick golden brown liquid; don't stop stirring the caramel. Once the sugar has completely melted, add the butter. The caramel will start to bubble rapidly- be careful your arms don't get burned. Stir the butter into the caramel until completely melted and homogenous- about 2-3 minutes. Allow the mixture to boil for 1 minute (it will rise in the pan as it boils) then remove from heat. Stir in the salt and allow to cool before using- you want the caramel to be slightly warmer than room temperature.

Once the caramel is cool enough, pour it over the cooled sheet cookie. Spread it in an even, uniform layer, then refrigerate overnight. Cut into pieces and serve.
