Rocky Road Cookies

Cookies
 ½ cup Almonds (chopped)
 ½ cup Walnuts (chopped)
 ½ cup Mini Marshmallows
 1 cup Butter (soft)
 ¼ cup White Sugar
 ¾ cup Brown Sugar
 4 oz Instant Pudding Mix (vanilla, chocolate, or butterscotch)
 1 tsp Vanilla
 2 Eggs
 2 ¼ cups Flour
 1 tsp Baking Soda
 12 oz Package Semisweet Chocolate Chips

Prep and Bake

Cream the butter and sugars together. Gradually add the dry ingredients. Once dough is finished mixing, add the chocolate chips. Add the nuts to the cookie dough and mix thoroughly. Form a 1 inch ball and bake at 375 for 8 minutes. When cookies are slightly golden and just set on top, remove from oven and top with additional chopped nuts and marshmallows. Turn the oven broiler on and carefully watch the marshmallows roast for about 30 seconds. Remove promptly once marshmallows are golden brown and allow cookies to rest on pan until firm before devouring.
