Rice Crispy Rainbow Cake

Pressed into a Bundt pan, this rice crispy piece de resistance can be as colorful as you want! I personally believe that rice crispy treats are the easiest dessert to make at home. It’s a premeasured package of marshmallows, a dab of butter, and 6 cups of rice cereal. Plus they’re just so tasty! So, if you want to impress all your friends with your culinary skills, but don’t actually have any culinary skills, this recipe will artfully disguise that ignorance. (Just an FYI, the prep will be a little sticky.) Featuring variegated layers of color and molded to wear whatever curves and ridges are on your Bundt pan, this dessert is both impressive and easy.

Ingredients
 3 Bags (10 oz) Mini Marshmallows
 1 Family Sized Box Rice Cereal
 1 stick Butter (divided into thirds)
 Red Food Coloring
 Purple Food Coloring
 Yellow Food Coloring

Prep and Serve

Combine the marshmallows and butter in a heat proof bowl and microwave in 1 minute intervals until the butter is melted and the marshmallows are super fluffy and fully deformed. Promptly add the cereal the mixture and mix well. Once the crispies are homogenous, add the red food dye to the bowl. Using either a spoon or disposable gloves, mix the color until uniform; if needed, add extra dye until you achieve your desired shade. Press the rice crispy treats into a greased Bundt pan so that it molds to the shape of the pan. Repeat making another batch of rice crispy treats and add the purple food coloring. Combine well, then press into the pan on top of the red layer. Repeat for a third time and add the yellow food coloring; press on top of the purple layer. Flip the Bundt pan upside down and remove the pan to reveal the rice crispy masterpiece.
