Reese’s Peanut Butter Cupcakes

Happy National Peanut Butter Day internet friends! Instead of diving head first into Peanut Butter-dom, I have a slightly more complex and 100% delicious recipe to share with you today. Imagine a moist chocolate cupcake topped with a rich, mouthwatering, inherently addictive peanut butter frosting. This is what I present to you today. Garnish each creation with a peanut butter cup pressed into one side of the frosting to complete the chocolate peanut butter matrimony.

Cupcakes
 1 ½ cups Flour
 1 cup Cocoa Powder
 1 tsp Baking Soda
 1 ½ tsp Baking Powder
 ½ tsp Salt
 4 Eggs (room temperature)
 1 cup Sugar
 1 cup Brown Sugar
  cup Oil
 1 cup Milk or Buttermilk
 1 tbsp Vanilla
Frosting
 ½ cup Butter (soft)
 ½ cup Creamy Peanut Butter
 3 tsp Vanilla
 1-2 tbsp Milk
 3-4 cups Confectioners' Sugar
 Peanut Butter Cups (for garnish)

Cupcakes

Combine the dry ingredients in a bowl. In a large bowl, whisk the wet ingredients until well combined. Pour half of the dry ingredients to the wet ingredients. Combine until homogeneous then add the second half of the dry ingredients. Do NOT over mix. Fill the cupcake liners 2/3 full and bake at 350 for 18-22 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow cupcakes to cool.

Frosting

Beat the butter and peanut butter together until smooth. Add vanilla, milk, and half of the confectioners' sugar. Continue adding sugar until you reach your desired consistency. If the frosting becomes too thick, add more milk. Scrape the frosting into a piping bag and pipe the frosting onto the cupcakes. Set a peanut buttercup into one side of the frosting to garnish.
