In a medium saucepan, bring the sugar, corn syrup, and peanut butter to a boil. As soon as the mixture reaches a boil, remove the pan from heat.
Stir in the vanilla and cornflakes until homogenous. Once the batter is uniform, spoon the batter into individual cookies on a parchment paper lined cookie sheet. Allow the mixture 20-30 minutes to cool before serving.
