Raspberry Thumbprints

This fabulous raspberry shortbread cookie recipe will make your mouth water. With a bold almond flavor, thanks to both the cookie and the glaze, this culinary treat is a fairly simple dish that will have you coming back for more after your first bite.

Now, it’s been over two years since I first posted this recipe. And in that time, we have greatly improved- our equipment, skillsets, experience, and our standards. So I recently updated the blog post; finally bringing this post up to our new quality standard. Which, frankly, was long overdue. The original pictures definitely look like they were taken by beginners- which, to be fair, they were. Two years ago, I had no clue what I was doing… and it showed.

So I hope you enjoy the updated version of the same scrumptious raspberry thumbprint recipe.

Recipe:

Cookies
  cup Sugar
 1 cup Butter
 ½ tsp Almond Extract
 2 cups Flour
 ½ cup Raspberry Jam
Glaze
 1 cup Confectionery Sugar
 1 ½ tsp Almond Extract
 2-3 tsp Water

Cookies

Combine sugar, butter, and almond extract then beat at medium speed till creamy. Add flour and beat well. Cover and chill for 1 hour. Shape into 1 inch balls and press thumb into middle of the cookie. Using a 1/4 tsp, spoon the raspberry jam into the center of the raw cookie. Bake at 350 degrees for 14-18 minutes. Cool completely.

Glaze

Mix all ingredients together and drizzle over top of cooled cookies.
