Rainbow Layer Cake

This vibrant confection was addictively delicious. The rich cream cheese frosting was to-die-for and between the two of us, my brother and I ate the whole dang thing. The simple vanilla sponge layers were easily enhanced with simple food coloring. And as long as the layers got arranged in the proper order, that was it. Zero effort needed to go into decorating- because the cake itself was the show stopper. For that very reason, I found the assembly of the cake to be the hardest part. It was my biggest fear that I’d somehow get the order of the colors of wrong and the whole thing would be ruined. Luckily, ROY G BIV and I were able to work together and create this stunning (albeit, frustratingly irresistible) 7 layer cake.

Cake
 1 cup Butter (soft)
 2 ½ cups Sugar
 3 Eggs
 1 tbsp Vanilla
 1 cup Buttermilk
 ¼ cup Heavy Whipping Cream
 3 cups Flour
 1 tbsp Baking Powder
 ½ tsp Salt
 Food Coloring
Frosting
 12 oz Cream Cheese (soft)
 1 ½ cups Butter (soft)
 6 cups Confectioners' Sugar
 1 tbsp Vanilla

Cake

Preheat the oven to 325 degrees.

In a large bowl, cream the butter and sugar together. Add the eggs and mix well. Add the vanilla, buttermilk, and heavy cream. In a separate bowl, combine the dry ingredients. Fold in half of the dry ingredients; once the mixture is well combined, mix in the rest of the flour.

Divide the batter into 6 different bowls (just barely over 1 cup of batter per bowl). Add food coloring to each bowl, creating a vibrant red, orange, yellow, green, blue, indigo, and violet (ROY G BIV).

Pour the batter from each bowl into a greased 9 inch springform pan. (I didn't have 6 separate pans, so I baked my layers in batches.) Bake for 10-15 minutes, or until the center is set. Do NOT overbake. These are thin layers, so be sure to keep an eye on them. Place the cake layers on a wire rack and allow to cool completely.

Frosting

Beat the cream cheese and butter together until smooth. Add the confectioners' sugar and vanilla; beat until well mixed. Once the frosting is prepared, place the violet cake layer on a cake stand. Top with 1/2 c of frosting and spread until level.

Repeat with each layer in ascending order of ROY G BIV or VIB G YOR. Chill the layers of the assembled cake until firm enough to completely frost the sides and top of the cake. Garnish with sprinkles, if desired.
