Peppermint Cupcakes

These are as cute as a button, and come right out of a box mix! This is officially the easiest holiday cupcake I’ve made all season! All you have to do is add a little food coloring to a third of the white cake batter and alternate pouring white and red into the cupcake liner. That’s it. Swirl the colors together with a knife and decorate with a peppermint kiss on top of a cream cheese frosting. And the addition of peppermint extract to the batter really elevates recipe this from a blasé box mix to a wintertime delight.

Ingredients
 1 Box White Cake Mix
 1 Can Cream Cheese Frosting
 1 tsp Peppermint Extract
 3 drops Red Food Coloring
Garnish
 Peppermint Kisses
 Candy Canes (crushed)

Prep

Prepare the cake mix according to the instructions on the back of the box, adding peppermint extracting. Reserve 1 ¼ cup of batter in a separate bowl; add the red food coloring. Spoon 1 tablespoon of white batter into a cupcake liner. Spoon 1 tablespoon of red batter on top and finish the cupcake with another tablespoon of white batter. Using a knife, swirl an “S” shape into each cupcake.

Bake and Garnish

Bake as directed on the box. Once they've finished baking, allow to cool completely. Pipe frosting onto each cupcake. Top with a peppermint kiss and garnish with crushed candy cane.
