Peanut Butter Trifle

This light and peanut buttery dessert is perfect for a light, summertime dessert. Or just an I-have-to-have-it time dessert. Featuring layers of a melt-in-your mouth peanut butter cookie (recycled from theUltimate PB Recipe), cool and fluffy whipped cream, and not one but two different type of Reese’s peanut butter candies. (If your guessing, they would be the classic peanut butter cup and the more avant garde Reese’s pieces.) Together, all of the peanut butter flavor comes together for one unbelievably delicious dessert.

Cookies
 ½ cup Unsalted Butter (soft)
 1 cup Creamy Peanut Butter
 1 cup Brown Sugar
 1 Egg
 1 tsp Vanilla
 1 ⅔ cups Flour
 1 tsp Baking Soda
 ½ tsp Salt
 ¼ cup Sugar (for rolling)
Whipped Cream
 2 cups Heavy Cream
 3-4 tbsp Confectioners' Sugar
 2 tsp Cream Cheese (heaping)
 2 tsp Vanilla
 Reese's Peanut Butter Cups (crumbled)
 Reese's Pieces

Beat the butter until smooth. Add the peanut butter and brown sugar, beating on high speed until the color lightens and fluffy. Beat in the egg and vanilla until well combined. Combine the dry ingredients together and beat on low until well combined. Scrape out roughly 1 tablespoon of dough and gently flatten the cookie, then roll in sugar. Place on a cookie sheet and bake for 9-10 minutes, or until the cookie puffs up and the edges are set. Remove from the oven and allow to cool 10 minutes before transferring to a wire rack to cool.

Whipped Cream

Beat the heavy cream until soft peaks form. Add the cream cheese, sugar, and vanilla; beat until stiff peaks form. Crumble a cooled peanut butter cookies into the bottom of a glass and top with whipped cream. Sprinkle pieces of peanut butter cups and Reese's pieces on top of the whipped cream layer. Repeat the layers until the glass is full. Serve promptly to avoid a soggy peanut butter cookie layer.
