Peanut Butter Chocolate Chip Cookie Skillet

This skillet cookie is dripping with hidden surprises. Mostly of the peanut butter variety- which is okay by me. Now, I don’t know if you can tell I was a little distracted when I did the end shots for this recipe. Does the finished cookie look a little naked? That’s because I totally forgot to dress it up. There are no drizzles of melted chocolate or peanut butter, no scoops of ice cream, no bonus candies sprinkled over the top for garnish. Nothing. I completely spaced. And now, every time we visit this recipe, we’ll all be a little disappointed.

Luckily for me, two giant chocolate chip cookies sandwiching a gooey candy center is already pretty exciting.

Regardless of any garnish mishaps, this recipe is still drool worthy. Picture this: A giant round of chocolate chip cookie dough gets cradled by a greased cast iron pan. This cookie is suddenly drizzled with melted peanut butter, sprinkled with crushed Oreos, and dotted with peanut butter cups. And then, like a governmental conspiracy, it all gets covered up- with a second helping of chocolate chip cookie dough.

Huh.

So… Maybe that wasn’t the best analogy. (Though, I bet people would be more accepting of cover stories if everyone got a freshly baked chocolate chip cookie with their lie. Just saying, guys.) Anyways, after the second layer of chocolate chip cookie dough goes on, it all gets baked to golden perfection and devoured ASAP.

At least I did that last part right.

 16.50 oz Chocolate chip cookie dough
 ½ cup Peanut butter
 ½ cup Chocolate sandwich cookies, crushed
 ½ cup Peanut butter cups

Preheat the oven to 350 degrees.

Divide the chocolate chip cookie dough in half. Press one of the halves into the bottom of a greased cast iron pan.

Spoon the peanut butter into a small bowl and microwave until melted. Drizzle the liquid peanut butter over the chocolate chip cookie dough base. Sprinkle cookie pieces and peanut butter cups across the surface of the cookie dough.

Form the reserved chocolate chip cookie dough into a circle. Press the dough over the top of the peanut butter cups and cookie pieces, so the dough covers the entire diameter of the pan.

Bake for 20 minutes, or until the top of the chocolate chip cookie is golden brown. Remove from the oven. Either allow to cool or, if you'd rather eat it warm, be wary of the hot skillet.
