Oreo Brownies

A dense, homemade brownie- made with melted dark chocolate- forms the base for this “dynamic duo” recipe. And while the brownies would be good enough on their own, the addition of the crisp chocolate sandwich cookie crunches, scattered throughout the batter and pressed into the top, make it a truly unbeatable recipe. Since I’ve made this recipe before, I was surprised to learn that I’d never made a video for it. Apparently, the first time around I had just taken a few photos and called it a day. (Which leads me to believe that this recipe must have come up pretty early in the life of our business. Since practically the dawn of the bakery, (or so it feels,) I’ve been on a strict video-focused regiment.) But it’s no hardship to have another batch of these around the house.

Recipe:

 11 tbsp Unsalted Butter
 7 oz Dark Chocolate, chopped
 ¾ cup Brown Sugar
 3 Eggs
 2 Egg Yolks
 2 tsp Vanilla
 2 tbsp Flour
 1 tbsp Cocoa Powder
 13 Oreo Cookies, crumbled

In a saucepan, melt the butter; then add the chocolate. Let sit until the chocolate softens, then stir until smooth. Once smooth, remove from heat and set aside to cool slightly.

Preheat the oven to 350 degrees.

In a large bowl, combine the eggs, egg yolks, and vanilla with an electric mixer. Whip until the mixture becomes light and frothy. Add the sugar in two additions, beating between each. Take care to pour the sugar around the edges of the bowl, in order to prevent knocking the air out of the mixture.

Keep mixing until the mixture becomes stiffer, then pour in the chocolate mixture. Again, add to the edges of the bowl to keep the batter aeriated. Mix until well combined, then add the flour and cocoa. Stir until the batter is fully incorporated, then fold in 1/3 of the Oreos.

Pour the batter into a greased 9 x 13 inch pan. Top with reserved cookies, gently pressing them into the batter. Feel free to add additional cookies to the top, if desired. Bake for 25-30 minutes, removing when the middle is very slightly gooey.
