Nutella Stuffed Pancakes

For a special breakfast option that demands almost no extra effort, this recipe is worth its weight in, well, Nutella. While similar to crepes with Nutella spread across them or even a cake with chocolate frosting, this recipe has all of its chocolaty goodness discreetly sandwiched inside! And it only takes 20 minutes of forethought and a jar of Nutella to make. Simply make and freeze a handful of “Nutella patties” for the filling; proceed to make pancake batter as usual. Then pour the pancake batter into the pan and place one of the frozen disks in the center of the pancake. Cover all exposed chocolate with additional pancake batter, et voila! It’s that easy. And, just in case you were wondering, they were still good leftover. In fact, they tasted very much like the Nutella Braided Bread I made once before (which was soo good). So if you’re hoping to add a little “je ne sais qoui” to your breakfast, I wholeheartedly suggest you try adding Nutella inside your pancakes.

Filling
 14 tbsp Nutella
Pancakes
 1 ½ cups Flour
 3 tbsp Sugar
 1 tbsp Baking powder
 ¼ tsp Salt
 1 Egg
 1 tsp Vanilla
 1 cup Milk

On a parchment paper lined cookie sheet, spread two tablespoons of Nutella into a flat 2 1/2 inch diameter circle. Place the cookie sheet in the freezer for 15-20 minutes or until solid. Leave in the freezer until ready to use.

Combine the dry ingredients in a medium sized mixing bowl. Add the wet ingredients and whisk until homogenous.

Heat a greased skillet on medium heat. Scoop one quarter cup of pancake mix onto the prepared pan. Remove one of the frozen Nutella disks from the freezer and press into the pancake. Cover all exposed chocolate with additional pancake batter and cook until both sides are golden brown. Repeat with all remaining batter and Nutella patties. Serve warm.
