M&M Bonanza Cupcakes

You know those days, where everything goes wrong, and there’s not enough chocolate in the world to make it better? Well, these cupcakes come darn close. It starts with a chocolate cake batter, to which you add M&Ms. Pour the batter into a cupcake tin, bake them, and let them cool. Next, you carve out the center of the cupcakes and fill the void with more M&Ms. Then simply cover the exposed M&M core with chocolate frosting. This step hides all of the M&M mania, so that to the untrained eye, they look like a regular chocolate cupcakes. But then, just because I could, I rolled the tacky chocolate frosting in a bowl of M&Ms. You know, to decorate it.

So the next time you’re feeling depressed about the state of the world or how crumby your day was, mix up a batch of these cupcakes. No, it won’t fix anything. But the healing powers of chocolate will sooth your mind for a couple of minutes. And sometimes, a couple minutes of peace can make all the difference. So join me in eating an overzealous chocolate cupcake. Together, let’s enjoy one perfect moment, where everything bad dissolves into a chocolaty nirvana. Because honestly, the end of “life as we know it” just isn’t that scary- provided we have enough chocolate.

 1 box Chocolate cake mix
 4 cups M&M candies (Idk the exact quantity, but you'll need a lot)
 Chocolate frosting

Preheat the oven to 350 degrees.

Prepare the cake mix according to the directions on the back of the box. Once the cake batter has been assembled, fold 1 1/2-2 cups of M&Ms into the batter. (I just eyeballed the amount. You can adjust the amount of candies based on personal preference.)

Pour the batter into a muffin tin prepped with cupcake liners. Bake for 20 minutes or until a toothpick comes out clean when inserted in the center of the cupcakes. Remove from the oven and allow to cool completely.

Using a sharp knife, cut out the center of the cupcakes. Once the centers have been removed, fill the void with M&M candies until they're flush with top of the remaining cupcake.

Frost the top of each cupcake. Then, if desired, roll the tacky frosting in a bowl of M&M candies to garnish.
