Minion Cupcakes

Minions. You know them from Despicable Me and beyond. They’re everyone’s favorite bumbling, yellow cartoon creatures. Speaking in their own private language; which is an curious blend of genuine phrases, from multiple languages, that’s been blended with a whole lotta gibberish. And have you noticed how they always travel in packs? You never see a solitary minion. Ever. There are no loners or introverts- they simply don’t exist. They only ever come in pairs- or more commonly, in hoards.

Now, I fully intended to make this recipe sooner- like, a month ago. But I forgot to buy blue cupcake liners. Which sounds like a simple oversight, but it was critical detail to overlook. Because there’s really no point in making minion cupcakes if the minions aren’t wearing their blue jumpsuits. In fact, without their signature suits, are they even still minions? Or just magically animated yellow jellybeans? Never mind. I’m seriously over thinking this.

Good news: These minion cupcakes are incredibly easy to make. It’s just a white cupcake- that’s been baked in a blue cupcake liner- and frosted with yellow frosting. Then the eyes are created using half a marshmallow and a mint that’s “glued” to the marshmallow with a touch of frosting. Then all that’s left is the black strap around their eyes and the facial expressions- all of which get finished off with the black gel pen. So without too much effort on your part, you can make some adorable cupcakes that are sure to thrill the little minions in your own life.

 1 box White cake mix
 Yellow frosting
 12 Marshmallows
 24 Junior Mint candies
 Black gel pen

Prepare the cake mix according to the direction on the box. Pour into a cupcake tin lined with blue cupcake liners and bake until a toothpick inserted in the cupcake comes out clean. Remove from the oven and allow to cool completely.

Frost the cupcake with yellow frosting. Keep the surface relatively flat- don't mound the frosting.

Take a marshmallow and cut it in half, so that you get two stout marshmallow circles. Depending on whether your cupcake will have one eye or two, you will either use the both marshmallow halves or just one half. Press the cut side of the marshmallow into the frosting towards the top of the cupcake to create the eye/s.

Take one of the mint candies and dab a touch of frosting to one side of the candy. Press the frosted side onto the marshmallow to create a pupil.

Using the black gel pen, draw the black goggle strap that extends from each side of their marshmallow eye/s. Continue using the pen to draw a mouth. Have fun creating different facial expressions and give the cupcakes personalities.
