When you combine appetizers with Mexican food, you get a super delicious mega food.

Spray 30 mini muffin cups. In a large bowl, mix the spinach, tomatoes, cream cheese, sour cream, and taco seasoning. Set aside. Place Doritos in a small ziplock bag and seal. Finely crush the chips, then measure out 1/2 c; add the Doritos to the spinach filling. Separate each biscuit into 3 layers (sometimes you can only separate a biscuit into two layers, which is fine). Place 1 layer in each muffin cups and press the dough onto bottom and up the side of each cup. Fill each cup with about 1 tbsp of the spinach mixture. Sprinkle filling in each cup with about 1 tsp of cheese.
Bake at 375 degrees for 10-12 minutes, until the biscuit edges are golden brown. Cool in pan 5 minutes, then remove from pan and place on a cooling rack.
