These cuties are actually three dimensional thanks to a sneaky marshmallow hiding underneath the melted white chocolate. With a peanut butter cup top hat, two eyes made out of coal (JK, they’re mini chocolate chips), and a single orange sprinkle for a nose; what these snowmen lack in form, they make up for in charm. The chocolate cookie base, fluffy marshmallow “middle,” and creamy white chocolate shell all combine in a surprisingly harmonious blend of flavors.
Beat shortening and peanut butter together for 30 seconds. Beat in the sugars, salt, baking powder, and baking soda, mixing until well combined. Add the wet ingredients to the mixture. Beat in the cocoa powder and flour. Shape dough into 2 inch balls and space 2 inches apart on a parchment paper lined baking sheet. Bake at 350 for 9-11 minutes or until the edges are just firm. Allow to cool completely.
Microwave the white chocolate until melted and smooth, heating in increments and stirring often. (Start with half of the chocolate and melt more as needed so that the chocolate stays warm and depending on how many cookies you end up with, you might not need to entire pound.) Set a marshmallow half on top of a cooled cookie. Spoon melted chocolate over the marshmallow until chocolate oozes off the sides and the marshmallow underneath is completely covered. Promptly place a peanut butter cup half at one end for a top hat. Put two mini chocolate chips point side down beneath the hat to create eyes and lay a single orange sprinkle just under the eyes for the nose. Allow chocolate to harden completely before serving.
