Measuring Dry Ingredients

You might think you already know how to measure ingredients, but it’s such an important part of the baking process that I need to mention it.

For dry ingredients, select your measuring cup and fill completely. Then take a knife or offset spatula to level the surface. Once you’re more familiar with your kitchen, you can start to take liberties with the knife step; calling it “close enough.” But to begin with, you need to be precise.
