There is nothing like a serving of ice cream to combat the summer heat. And while not as cold, these adorable ice cream sundae inspired cupcakes really do the trick too. The key to the entire recipe is super stiff frosting. Otherwise, the frosting won’t hold it’s shape and will end up looking more like melted ice cream. And nobody wants that! Decorate with a drizzle of syrup (we chose chocolate, but you do you), sprinkles, and a stemmed maraschino cherry to complete the image.
Following the directions on the boxed cake mix, make cupcakes and allow to cool completely.
Beat the butter until smooth, then add the confectioners' sugar. Add a splash of clear vanilla for flavor and if your mixer is working too hard, add a tiny amount of milk to thin the frosting. The frosting MUST be stiff or it won't work properly. Using an ice cream scoop, scoop a round dollop of frosting. Pull the lever and set the scoop of frosting on top of the cupcake.
Decorate with chocolate syrup, a generous helping of sprinkles, and a single maraschino cherry. Serve immediately.
