Ice Cream Sundae Cake

Ice cream sundaes are a summer staple; now, they are a cake decoration, too. It’s as simple as cutting an ice cream cone in half (with a serrated blade) and pressing it into the side of the cake. Then scoop a dollop of frosting into the cone and garnish with a maraschino cherry and some sprinkles. For added pizazz, spread a thin layer of chocolate ganache over the top of the cake and throw some sprinkles on top to complete the ice cream dream cake.
Frosting:
1-2 lbs confectioners’ sugar
1 c unsalted butter
clear vanilla
dash of milk, for consistency
Beat the butter until smooth, then add the confectioners’ sugar. Add a splash of clear vanilla for flavor and if your mixer is working too hard, add a tiny amount of milk to thin the frosting. The frosting MUST be stiff or it won’t work properly.
Decorations:
maraschino cherries
chocolate ganache
ice cream cones
rainbow sprinkles
Once the cake has been frosted, drizzle the top of the cake with a chocolate ganache. Spread the ganache until smooth and add some sprinkles atop the ganache. Using a serrated knife, cut an ice cream cone in half and press into the side of the cake. Repeat until the sides of the cake are completely covered in halved ice cream cones. Top the ice cream cones with a scoop of frosting and garnish the tops of the frosting with chocolate syrup, sprinkles, and a single maraschino cherry.
