Homemade Oreos

Oreos are a super tasty cookie. No question. But in my line of work, I think of them more as an ingredient than a cookie. So I started wondering: Could I just make my own? The answer is yes and no. Yes, I did make homemade Oreo cookies- but they’re a soft cookie. They don’t have the same crunch as the store bought kind. Am I upset? Not in the least! These soft chocolate sandwich cookies with vanilla filling are scrumptious!

I used my grandma’s tried and true cookie recipe. It’s eggs, oil, and the cake mix of your choice. That’s right. I used a boxed chocolate mix to make my Oreos- and I couldn’t be happier with how they turned out. Now, you might be thinking that this is cheating. And maybe so. But my grandma had five kids- which made baking cookies an exercise in futility. So I for one respect her culinary cunning. (And not to get distracted, but this recipe works with any flavor cake mix you want. You could make this exact same recipe with a lemon cake mix, to create lemon cookie sandwiches, and you would not be disappointed. This recipe is that good.)

This is one of the absolute easiest recipes to make. It’s a three ingredient chocolate cookie that you portion into teeny tiny cookies and bake. And once your cookies are cooling, you whip up a three ingredient filling recipe. Simply pipe the filling onto the flat bottom side of one of the cookies; then assemble the sandwich by pressing a second cookie on top. Done.

Cookies
 1 Chocolate cake mix
 ½ cup Oil
 2 Eggs
Filling
 3 cups Confectioners' sugar
 ¾ cup Butter, soft
 3 tsp Vanilla

Cookies

Preheat the oven to 350 degrees.

Combine the cake mix, oil, and eggs in a bowl. Beat all the ingredients are until fully incorporated.

Take roughly 1 tablespoon of batter and shape into a circle. Set on a parchment paper lined cookie sheet. Space the cookie dough so that no cookie will expand into its neighbor in the oven. Repeat with remaining dough.

Bake for 10-12 minutes in the oven. Remove from the oven and allow to cool fully.

Combine all ingredients together and beat until smooth.

Take two cooled cookies of equal diameters and flip one cookie upside down. Using a piping bag fitted with a round tip, apply the filling to the bottom side of the cookie. Complete the cookie sandwich by pressing the second cookie on top, normal side up, so that the flat bottom is towards the filling. Repeat with remaining cookies.
