Golden Oreo Strawberry Cheesecake

Vanilla sandwich cookies, a creamy layer of sweet cream cheese, and a generous helping of strawberry jam- I have yet to see a single downside to this recipe. Perfect for anyone who dislikes the taste of chocolate, or who is just in the mood for a treat, this playful delight is a scrumptious way to end the day. Word of advice: this dish is best served sooner rather than later, since the cookie crunch quickly loses its integrity when stored in the refrigerator.

Crust
 3 tbsp Unsalted butter, melted
 24 Vanilla sandwich cookies, halved
Strawberry Jam
 1 ¼ cups Strawberries, medium dice
 1 tbsp Sugar
 1 tbsp Water
 2 tsp Lemon juice
 ½ tsp Cornstarch
Cheesecake Layer
 8 oz Cream cheese
  cup Sour cream
  cup Sugar
 ½ tsp Vanilla
 1 Egg

Crust

Preheat the oven to 350 degrees.

Place half the Oreos in a food processor and pulse until there are only crumbs. Add the melted butter and pulse until well mixed. Press the crumbs into an 8 inch baking pan lined with parchment paper. Bake for 5 minutes, then set aside to cool.

Strawberry Jam

Place strawberries in a medium size saucepan with sugar and water. Bring to a boil, cover and simmer, stirring frequently, for 10 minutes or until soft. Add lemon juice and cornstarch to the pot and simmer one minute more until thickened.

Place strawberry mixture in a blender or food processor and pulse until smooth; set aside. (Tip: This makes more jam than is needed for this recipe. If leftover sweet strawb jam offends you, cut this part of the recipe in half.)

Cheesecake Layer

Preheat the oven to 325 degrees.

Beat all ingredients together until smooth and well combined. Pour on top of the Oreo crust. Pour half of the strawberry sauce on top of the cheesecake layer. Bake for 36 minutes or until the cheesecake is just slightly jiggly. Remove from the oven and let cool on a wire rack.

Crush the reserved Oreos and sprinkle on top, gently pressing into the bars. Cover with plastic wrap and chill in the refrigerator for at least 3 hours before cutting the bars into squares.
