Gingersnap Cheesecake

This is one of the easiest desserts you will ever make. Just create a sandwich cookie out of gingersnap cookies and a creamy filling, refrigerating it, frost it like a cake, and voila. Plus it has beautiful vertical stripes that are revealed once you slice it open. It’s simply a must make cake.

Cheesecake Filling
 ¼ cup Heavy whipping cream
 8 oz Cream cheese
  cup Sour cream
 3 tbsp Sugar
 1 ½ tsp Vanilla
 40 Gingersnap cookies
Frosting
 1 cup Heavy whipping cream
 3 tbsp Confectioners' sugar
 Gingersnap cookie crumbs, for garnish

Cheesecake Filling

Combine heavy cream, cream cheese, sour cream, sugar, and vanilla in a bowl. Beat smooth. Spread the filling on one of the cookies and create a sandwich. Grab a second cookie, spread filling on one side, and connect to the original sandwich. Place in a bread pan and repeat until you hit the wall. Create a second roll and fill the entire bread pan. Cover with saran wrap and refrigerate at least 6 hours or overnight.

Whip the heavy cream and confectionery sugar together until stiff peaks form. Spread over the top and sides of the cake and sprinkle crumbs for a garnish. Server immediately.
