Easter Sugar Cookie Cake

This festive pastel creation is as tasty as you’d expect a sugar cookie- loaded with M&Ms, white chocolate, sprinkles, and frosting- to be. What starts out as a simple sugar cookie gets completely revolutionized after the addition of, well, a whole host of sweet morsels. (These “morsels” are all the usual suspects- chocolate, more chocolate, some sprinkles… My go-tos.) Then it gets popped in the oven, baked to golden perfection, and decorated with frosting. Which is important; because it’s not a cookie cake without frosting. A cookie cake without frosting is just a really big cookie.

In fact, if you’re looking to growing your culinary confidence, this is the perfect recipe to experiment on. Start with the sugar cookie base, then try adding or subtracting the different candies to create your own flavor combinations. For example, if you’re not a fan of M&Ms, try adding peanut butter cups or Reese’s pieces. Or, if you want more chocolate in every bite and are feeling adventurous, try adding a combination of semi-sweet, milk, and dark chocolate chips. You could play with the frosting-to-cookie ratio by decorating more or less of the cookie’s surface. See what happens.

 16.50 oz Sugar cookie dough
 ½ cup Spring themed sprinkles
 ½ cup Pastel M&Ms
 ½ cup White chocolate chips
 Vanilla frosting
 Extra sprinkles, for garnish

Preheat the oven to 350 degrees.

Unwrap the sugar cookie dough and put it in a mixing bowl. Add M&Ms, white chocolate chips, and sprinkles to the bowl; mix until fully integrated. Scrape the dough into a greased 9 inch spring form pan. Spread the dough evenly across the pan and bake for 26 minutes or until golden brown.

Remove from oven and allow to cool completely. Pipe the vanilla frosting across the surface of the cookie cake to decorate it. If desired, add extra sprinkles to the tacky frosting before it hardens.
