Easter Peep Cake

This whimsical cake requires minimal prep time but is guaranteed to be a crowd pleaser. The cake is the least exciting part of the ensemble- it’s just a canvas, wrapped in a ring of brightly colored Peeps that dance around the edge. And in of the center of it all, sits a single orange carrot. It’s surrounded by upturned dirt and a lone, mischievous bunny. What a fun scene! Fun fact: The carrot on top of the cake is just a frosted cupcake! Before this, it had never occurred to me to put a cupcake on top of a cake. There are cupcakes; and there are cakes. But it is exactly that type of creative thinking that makes this dessert is so special!

 1 box Lemon cake mix
 24 Bunny Peeps
 1 can Vanilla frosting
 Orange food coloring
 Green licorice
 ¼ cup Chocolate sandwich cookies, crushed

Prepare the lemon cake according to the instructions of the box. Pour the batter into a single paper-lined cupcake well and then divide the remaining batter into two 8 inch springform pans. Bake until golden brown and a toothpick inserted in the center comes out clean. Allow the cake and cupcake to cool completely.

Reserve a small amount of frosting in a separate bowl and add orange food coloring; set aside. Frost the cake, then promptly place the bunny peeps around the edge of the cake while the frosting is still tacky, so they adhere. Take the cupcake and remove the paper liner.

Using the reserved orange frosting, frost the cupcake and set in the center of the cake. Stick the green licorice into the center of the orange cupcake to create a "carrot." Sprinkle crushed cookies around the base for "dirt" and place a single mischievous bunny next to the carrot.
