Easter Oreo Lollipops

A quick, festive way to celebrate Easter and impending spring! A crunchy sandwich cookie coated in a colorful chocolate and garnished with sprinkles.

 Double stuffed chocolate sandwich cookies
 Pink chocolate melting wafers, melted
 Sprinkles
 Lollipop sticks
 Bunny Peeps

Carefully separate the two sides of the sandwich cookie. Insert a lollipop stick in the center of the filling so that it overhangs the end of the cookie; then return the cookie half on top of the filling. Set the cookie on a wire rack and spoon melted chocolate on top of the cookie. Tap the wire rack against the table to smooth the surface of the chocolate.

Set a tray underneath the wire rack and then sprinkles on top of the tacky chocolate. Allow the chocolate to set then repeat with additional cookies. Once the chocolate has hardened, stab a Peep on the exposed end of the lollipop stick, so that it rests on top of the cookie.
