Double Cookie Brownie Skillet

What to say about this recipe? It’s something of a guilty pleasure to be sure: it’s a brownie batter that gets topped with rounds of cookie dough, sprinkled with pieces of Oreos, and then it all gets baked together in a single pan. I figured, looking at the ingredients, that I would make this recipe solely for the internet’s benefit; I’d make a video and take lots of pictures, then I’d throw any leftovers directly into the garbage. All three ingredients are pre-processed, high in sugar, and didn’t really tempt me- but wow, I couldn’t have been more wrong! I tried a bite when filming the video and ended up eating almost the entire skillet all by myself! I should be embarrassed but I have no regrets.

The one tricky thing about this recipe is that (at least in my case) the brownie batter and cookie dough had different cook times. This is an obvious problem because they are layer into the same pan… but I fear not, because I figured out a work around. Put the pan in the oven and bake until the cookies are finished and lightly browned. Then cover the entire surface of the pan with aluminum foil and continue baking until the brownie batter is fully cooked. The cookies will be more on the crisp side, but I didn’t find anything in my skillet to be unbearably over or under cooked. Use your best judgement and it should all work out- I believe in you!

 1 box Brownie Mix
 ½ cup Crushed Chocolate Sandwich Cookies
 1 roll Chocolate Chip Cookie Dough

Prepare the brownie mix according to the directions on the box. Pour the batter into the bottom of a greased skillet.

Cut the cookie dough into rounds and press into the top of the brownie batter. Sprinkle the crumbled chocolate sandwich cookie crumbs over exposed brownie batter.

Bake in accordance with the directions on the packaging. (Note: If the brownie batter needs to cook longer than the cookie dough, bake until the cookies are just golden brown. Then, cover the pan with aluminum foil and continue to bake until the brownie is fully cooked.)

Remove from oven and peel off aluminum foil. Garnish with scoops of ice cream, caramel sauce, and additional crushed sandwich cookies, if desired.
