There’s no way I’d rather start my day than with one or two, maybe even three, of these muffins. Studded with chocolate chips, these muffins are sweet, moist (thank you sour cream!), and oh so tasty. Offer a fresh pan of these to a stranger, and they’ll become your friend for life- that’s the kind of magic that these muffins possess.
Preheat the oven to 400 degrees.
Combine sugar and oil and beat on high for 2 minutes. In a small bowl, combine the cocoa and hot water into a smooth paste. Add to sugar mixture and beat for an additional minute. Add the eggs and vanilla.
In a separate bowl, combine the dry ingredients and whisk together. Alternate between adding dry ingredients and yogurt to the chocolate mixture. Stir until just incorporated- DO NOT OVER MIX. Fold in 1 cup of chocolate chips. Pour the batter into muffin tins and sprinkle the reserved chocolate chips on top of the individual muffins, gently pressing the chips into the batter. (I used mini chips on top of my muffins.)
Bake at 400 degrees for 7 minutes. Then reduce the temperature to 350 degrees and bake for 10-12 minutes until the edges are firm. Allow to cool slightly before removing from the pan.
