Dark Chocolate Strawberry Mousse Twists

Dark chocolate and strawberry are a match made solely for indulging your sweet tooth and this takes the pairing to brave new heights.

Strawberry Filling
 3 cups Strawberries, hulled & halved
 1 tbsp Lime zest
 ¼ cup Lime juice
 14 oz can Sweetened condensed milk
 3 tbsp Rum
 1 ½ cups Whipped cream
Dark Chocolate Mousse
 5 ¼ oz 70% Dark chocolate, coarsely chopped
 14 oz Heavy ceam, cold
 3 Egg whites
 1 oz Sugar

Strawberry Filling

Place 4-6 wine glasses in the freezer to chill. Combine all the ingredients, except the whipped cream, in a blender and blend until smooth. In a large bowl, beat the whipped cream until stiff peaks form.

Pour the strawberry mixture into a large bowl then slowly fold in the whipped cream. Pipe the strawberry filling into the chilled wine glasses and prop the glasses at an angle in the freezer for about an hour, or until frozen.

Place chocolate in a large bowl and create a double broiler by setting the bowl over a small saucepan of water. Bring the water to a boil and stir the chocolate until melted, then remove from heat and let stand. In a separate bowl, beat the cream over ice until if forms soft peaks. Set aside and hold at room temperature.

With a mixer, whip the egg whites to soft peaks. Gradually add the sugar and continue whipping until stiff peaks form. Fold the egg whites into the melted chocolate all at once. When the eggs are almost completely mixed, gradually fold in the whipped cream. After the mixture is fully combined, spoon into the goblets and return to the freezer for an hour, or until set. Remove from freezer before serving.
