Dark Chocolate Dragon Fruit Treats

With only 4 ingredients, this knockout dessert is delicious and stunning. Have you seen what dragon fruit looks like? This was my first encounter- and boy are they memorable! The outside is bright pink and it has these yellow-green tongues that peel off the sides and come together at one end to make a green leaf spike. And the inside- the inside is naturally magenta. MAGENTA! It’s surreal. (Or, depending on where it was grown, the fruit could be white.) Why does central America, or really any where near the equator, get all of the super cool fruit? Everything from the flora up to the fauna is so vibrant, eye catching, and completely unique. I’m kinda jealous, not gonna lie.

But perhaps the best thing about dragon fruit is how it makes this recipe standout. If you’re a coconut fan you’re in for a treat- this recipe tastes like a Mound bar dyed pink. And this it’s insanely easy to make: Just throw coconut, dragon fruit, and a dash of salt into a food processor together and blend. Refrigerate the mixture overnight, roll into a ball, and coat in chocolate. So, if you’re looking for a bespoke, signature treat to keep you going this winter, look no further; you’ve found it.

 2 cups Shredded coconut
 2 tbsp Maple syrup
 ½ cup Dragon fruit
 ½ tsp Salt
 3 oz Dark chocolate, melted

Combine the coconut, dragon fruit, and salt together in a food processor. Blend until well combined and a dough like consistency is achieved. Scrape the mixture into a loaf pan lined in parchment paper. Wrap the top with plastic wrap and refrigerate overnight. Once the mixture is firm, either cut into bars or roll into balls.

Rest the fruit mixture on a fork and dip into the melted dark chocolate. Tap the fork on the edge of the bowl to remove any excess chocolate. Allow chocolate to set. Store in the refrigerator until ready to serve. For the best texture, bring to room temperature before serving, about 15 minutes.
