Foam Cakes

When it comes to foam cakes, there are two key attributes that link them all together. The first is that they use a lot of eggs in their batters. But it’s not only about the number of eggs. It’s what you do to them that makes them truly special. Curious? Well, these eggs typically get whipped with a mixer until they’re as light and fluffy as a cloud…

Butter Cakes

As the name tells you, the key ingredient in a butter cake is butter. 🧈 This is what makes is the cake so moist. The extra fat keeps the cake from coming out dry and it also is responsible for making the cake more dense. Well, dense in comparison to the other type of cake, that is. Of course, butter also adds flavor and richness to your cake. And it even makes your cake more tender…

Layered Cakes

What is a layered cake? Well, basically you’re making multiple cakes and then stacking them one on top of the other with frosting in between. The end result is a single mega ultra king cake, better known as a layered cake.  How do you make one? Select a…

Take on frosting!

Buttercream Frosting

Buttercream is a fantastic choice for decorating with frosting. When you’re piping decorations on a cake, you need a frosting with a firm consistency that will hold its shape. And buttercream excels at this! In fact, it’s my go-to frosting for all my decorating needs. It’s super rich since…

Cream Cheese Frosting

Cream Cheese Frosting is always a good choice! It pairs especially well with carrot cake and pumpkin based cakes and cookies. Cream cheese frosting isn’t super stiff. Instead, the additional fat from the cream cheese makes for a wonderfully supple consistency. But it is smooth and rich, with a slightly bitter tang that’s the wholly due to…

Multi-Colored Frosting

They sell contraptions that allow you to have multiple independent piping bags all lassoed together. Or, if you want to do it on the cheap, you have two options. Firstly, you can scrape each of your different colored frostings into plastic wrap and roll it into a log shape. From there, either…

Dive into decorating!

Ganache Drip

How do you make a chocolate ganache, you ask?  You use a double broiler, of course! Or, if you don’t own one, (like me) you can use my substitute method. And, since I use this substitutive method to make my ganache, that’s the method that I’m going to teach you.  Now…

Chocolate Decorations

Chocolate is more than just a flavor- it can be a decoration, too!  Chocolate is a really cool way to create cake toppers that we simply can’t overlook. Chocolate can mold and bend to almost any shape when it’s melted. And then it can hold that shape once it hardens. (Can you see where I’m headed with this?) All of which means you can create some incredibly shaped…

Fondant too!

Coloring

One of the best things about fondant is how easily it takes color. And once you’ve dye it the color you want, you can turn that fondant into any shape that you’d like. But let’s not get too far down the infinite rabbit hole of making shapes just yet. 🐇🕳 First, let’s talk color.  There are three ways…

Covering Cakes

If you’ve ever seen a super smooth cake before, odds are it was covered in fondant. And you can did it yourself, as long as you know what you’re doing. So let’s make that happen! You need your cake to be fully cooled, leveled, and assembled with frosting before you pull out your fondant.  You need to fully frost your cake before you add the fondant. And try to…

3D Cutouts & Shapes

You need to roll out your fondant just like you will with cakes. If you need to, pop back into the last topic to refresh on how to roll out your fondant. And how to problem solve if any issues arise.  Now that you’re fondant is dyed and rolled out, (or just rolled out if you plan to paint it after you’ve cut out the various shapes) it’s time to cut them out! Literally just like…

A private community of like minded bakers

The course is hands on. As you work through the lessons, other bakers will be working right alongside you. Once you get to one of the “projects” (what we call baking a cool cake) you’ll get a chance to interact with these people.

This is our solution to step 3 of the baking process:  SHARE.  Now, you’ll never be without valuable feedback for your creations.

This is a friendly community with a focus on positivity and sharing constructive ideas.  Where you can celebrate successes, cry about failures, ask for advice, and simply make friends with other bakers just like yourself!  I’ll be in there too, so getting in touch with me will be as easy as… cake!

"learn in a month what took me years"

Mackie Anson | The joyful baker

“I’ve been where you’ve been, and it wasn’t all that long ago. I remember what you’re going through because I was in your shoes just 2 years ago. I’m not some expert who has been teaching on this topic for 20 years and has long since forgotten what it feels like to be in the beginning stages, I’m simply someone who figured out what works and wants to share my method with you.”

My story

I used to really struggle with cakes.  I was sure that all of the information I wanted to learn had to be out there, just scattered.  I watched every Youtube video I could get my hands on, read hundreds of articles, and spent 4 years baking full time. But I soon found out that the information wasn’t my main problem.  The REAL problem was that I could watch 5 hours of cake tutorials but when it came time to make it for myself, things never went like they did in the video.  And what was I going to do?  Shoot martha stewart a text and ask her why my ganache didn’t come to a boil like the one I just watched her make?  She’s probably on a beach somewhere anyways, or… in prison.  Come on Martha, be better.

In reality, I would end up scrapping the bake entirely or sadly eating an ugly drip cake in the corner of my living room.  It’s a very discouraging feeling that I hope you never have to experience.  I needed help and one more Food 52 video wasn’t going to solve it for me.  But unlike with the information, I couldn’t find the solution.  I didn’t want to “go to pastry school” no shot.  I didn’t have the time or the money for that.  So, I created a solution of my own!  I’ve summed up every little bit of cake knowledge I found over the years and turned it into a course that will actually help you become a better cake baker.  It’s structured to be easy to learn at your own pace, in your own home, and the best part of all… When things inevitably go wrong, you have help, you have feedback, and you don’t end up feeling like a worthless pile of… frosting.  It really is the program I wish I had when I started learning how to bake, frost, and decorate cakes.

Now I’d like to put that $14.99 in perspective…

I ordered a Custom cake from my local Cake shop

It’s a great looking cake!  I’ve got to give credit where credit is due.  The thing is, it cost me $99.84 to buy that cake.
