Crepe Cake

Why just have crepes when you can have layers and layers of crepes separated by whipped cream frosting and fresh fruit? Given the option, you wouldn’t! And now, you have options- you’re welcome. Enjoy!

Crepes
 1 cup Flour
 2 Eggs
 ½ cup Milk
 ½ cup Water
 ¼ tsp Salt
 2 tbsp Butter, melted
Filling
 6 oz Cream cheese
 1 ¼ cups Heavy whipping cream
 2 ½ tbsp Confectioners' sugar
 ¼ tsp Gelatin

Crepes
1

Whisk flour and eggs together. Whisk in remaining ingredients. Scoop 1/4 c of the mixture for each crepe. Pour into hot pan and tilt pan in circular motion for round, even crepes. Approximatly 2 minutes for each side.

Filling

Whip the cream cheese, sugar gelatin and whipping cream together until it forms stiff peaks. Lay a crepe on a plate, frost with filling and layer fresh fruit of your choice and repeat until you run out of ingredients, ending with a crepe on top.
