Whisk flour and eggs together. Whisk in remaining ingredients. Scoop 1/4 c of the mixture for each crepe. Pour into hot pan and tilt pan in circular motion for round, even crepes. Approximatly 2 minutes for each side.
Whip the cream cheese, sugar gelatin and whipping cream together until it forms stiff peaks. Lay a crepe on a plate, frost with filling and layer fresh fruit of your choice and repeat until you run out of ingredients, ending with a crepe on top.
