Cranberry Vanilla Energy Bites

Made of a combo of nuts, cranberries, and dates, these energy bites are an incredible snack! A sweet treat that uses only natural sugars (thank you, dates), offers a healthy source of fat (from the almonds and cashews; so you stay full longer), and a dash of vanilla flavor that ties everything together. Dried cranberries are sprinkled throughout the batter and provide a bright flavor point to the ensemble. You should be warned that if you eat the entire batch, these bites can quickly upgrade from snack to meal.

 ½ cup raw Cashews
 ½ cup raw Almonds or almond meal
 ½ cup Dried cranberries
 ½ cup Medjool dates, pitted & chopped (6-7 dates)
 ½ tsp Vanilla

In a food processor, combine the cashews and almonds. Pulse until they're finely ground- be careful not to turn the nuts into nut butter. Add the remaining ingredients and pulse until everything starts to come together. Scrape down the sides several times and add up to 2 tablespoons of water (I only needed 1 tablespoon).

You may need to remove the mixture and place it into a bowl and mash it together with either your hands or a spatula. Form into balls, about 2 teaspoons each. Store the energy bites in an airtight container in the refrigerator or the freezer.
