Cran-Apple Muffins

Despite being cranberry and apple muffins, the apple is incredibly subtle, allowing the cranberry to shine. And the orange glaze adds a whole new dimension of yum! You may not believe it, but these muffins really are as appetizing as they are attractive. And that’s quite the accomplishment.

Muffins
 1 cup whole berry Cranberry sauce
 ½ tsp Orange zest
 1 ½ cups Flour
 ½ cup Sugar
 1 tsp Cinnamon
 ½ tsp Baking soda
 ¼ tsp Baking powder
 ¼ tsp Salt
 1 Egg
  cup 2 % Milk
  cup Oil
 1 cup tart Apple, peeled & shredded
Glaze
 ½ cup Confectioners' sugar
 1 tbsp Orange juice

Preheat the oven to 375 degrees.

In a small bowl, combine the cranberry sauce and orange zest; set aside. In a large bowl, combine the dry ingredients. In a separate bowl, combine the egg, milk, and oil, then pour into the dry ingredients, mixing until just incorporated. Fold in the apple. Pour batter into a greased muffin tin or a paper liner, filling halfway. In the center of each muffin, place a tablespoon of the reserved cranberry mixture.

Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from the pan. Allow to cool completely.

Glaze

Mix the confectioners' sugar and juice together until smooth; then drizzle over the cool muffins.
