These Cosmic Brownie copy cats are as good as you remember from your childhood lunchboxes! This recipe has a sweet, chewy base and rich, chocolate ganache topping. But, and this is the most important part, these brownies feature those rainbow chip crunch sprinkles on top! You know- the ones that are almost mini M&Ms but aren’t actually M&Ms. And, if I’m being honest, those little morsels were the hardest ingredient to source for the whole brownie.
But you simply can’t have cosmic brownies without them. You just can’t.

Eventually, I found mine at Wegmans, but you can buy them on Amazon too. The ones I bought are made by Wilton and are called “Rainbow Chip Crunch Sprinkles.” Talk about a mouthful! But they’re the key ingredient in making a brownie recipe into a cosmic brownie recipe. Plus, they’re really yummy- because, ya know, they’re basically mini M&Ms. And who doesn’t love M&Ms?

Or, for that matter, who doesn’t love cosmic brownies made from scratch?! I mean, they have all the flavor you love with none of the preservatives that you don’t.

It’s the best of all the worlds! Nay- all the cosmos!!! 🌌⭐🚀


Cosmic Brownies

Ingredients
Brownie:
- 1/2 c flour
- 1/4 c cocoa powder
- 1/4 tsp salt
- 3/4 c brown sugar
- 5 tbsp unsalted butter, melted
- 1 egg and 1 egg yolk
- 1 tbsp honey
- 1 tsp vanilla
Ganache:
- 1 1/2 c chocolate chips
- 1/2 c heavy cream
- Candy coated chocolate sprinkles
Instructions
Brownies:
- Preheat the oven to 350 degrees.
- Combine the melted butter and brown sugar. Add the eggs, honey, and vanilla; mix well.
- Add the fl0ur, cocoa powder, and salt. Stir until just combined.
- Pour into an 8×8 inch pan lined with parchment paper.
- Bake for 20 minutes or until a toothpick inserted into the center of the brownie comes out mostly clean.
- Remove the brownies from heat and completely cool.
Ganache:
- Combine the chocolate chips and heavy cream in a microwave safe bowl.
- Microwave in 30 second intervals, stirring often, until the chocolate is fully melted. Stir the mixture until the ganache transforms from chocolate milk into a chocolate ganache. Once the mixture is uniform, you’ll be done.
- Spread the ganache over the cooled brownies and garnish with candy coated chocolate sprinkles.
- Wait until the ganache has set before serving. (I chilled mine in the fridge to speed up this process.)
