Cosmic Brownies You Can Make From Scratch

These Cosmic Brownie copy cats are as good as you remember from your childhood lunchboxes! This recipe has a sweet, chewy base and rich, chocolate ganache topping. But, and this is the most important part, these brownies feature those rainbow chip crunch sprinkles on top! You know- the ones that are almost mini M&Ms but aren’t actually M&Ms. And, if I’m being honest, those little morsels were the hardest ingredient to source for the whole brownie.

But you simply can’t have cosmic brownies without them. You just can’t.

Eventually, I found mine at Wegmans, but you can buy them on Amazon too. The ones I bought are made by Wilton and are called “Rainbow Chip Crunch Sprinkles.” Talk about a mouthful! But they’re the key ingredient in making a brownie recipe into a cosmic brownie recipe. Plus, they’re really yummy- because, ya know, they’re basically mini M&Ms. And who doesn’t love M&Ms?

Or, for that matter, who doesn’t love cosmic brownies made from scratch?! I mean, they have all the flavor you love with none of the preservatives that you don’t.

Cosmic Brownies


Units Scale


  • 1/2 c flour
  • 1/4 c cocoa powder
  • 1/4 tsp salt
  • 3/4 c brown sugar
  • 5 tbsp unsalted butter, melted
  • 1 egg and 1 egg yolk
  • 1 tbsp honey
  • 1 tsp vanilla


  • 1 1/2 c chocolate chips
  • 1/2 c heavy cream
  • Candy coated chocolate sprinkles



  1. Preheat the oven to 350 degrees.
  2. Combine the melted butter and brown sugar. Add the eggs, honey, and vanilla; mix well.
  3. Add the fl0ur, cocoa powder, and salt. Stir until just combined.
  4. Pour into an 8×8 inch pan lined with parchment paper.
  5. Bake for 20 minutes or until a toothpick inserted into the center of the brownie comes out mostly clean.
  6. Remove the brownies from heat and completely cool.


  1. Combine the chocolate chips and heavy cream in a microwave safe bowl.
  2. Microwave in 30 second intervals, stirring often, until the chocolate is fully melted. Stir the mixture until the ganache transforms from chocolate milk into a chocolate ganache. Once the mixture is uniform, you’ll be done.
  3. Spread the ganache over the cooled brownies and garnish with candy coated chocolate sprinkles.
  4. Wait until the ganache has set before serving. (I chilled mine in the fridge to speed up this process.)
