This homemade cinnamon-sugar filled dessert is equal parts scrumptious and easy to make. Using only a handful of ingredients, you make your own dough from scratch (taking care not to over knead). Roll out the dough and spread a generous layer of cinnamon and coconut sugar on the surface. Roll it up and bake it in the microwave for about a minute. Flip it upside down onto a plate, garnish (or drown…) with icing, and eat immediately. Yet another single serve delicacy, curtesy of my microwave and a coffee mug.
In a small bowl, combine the flour, baking powder, and salt. Gradually add water, stirring until the dough starts to form. (If you add too much water, add more flour to compensate.) Knead the dough together a few times until it's a small, malleable dough. Don't over knead! Lightly flour your work surface and roll out the dough into a 4 inch wide strip.
Evenly sprinkle the cinnamon and sugar onto the rolled out dough. Fold the edges inward like an envelope, then roll from one short end of the dough to the next. Set the cinnamon roll into a greased coffee mug. Sprinkle the top of the roll with the half teaspoon of water.
Microwave the mug for 45-50 seconds (mine took twice as long, about 1 minute 30 seconds. It depends on the microwave. Be careful not to overcook.) Once the cinnamon roll has risen in the microwave, (the middle shouldn't look uncooked) and a toothpick inserted in the dough comes out clean. Turn the dough upside down into a small plate.
Combine both ingredients in a small bowl; mix well. Pour over the top of the cinnamon roll and serve/eat immediately.
