Cinnamon Roll Cheesecake Cookies

Cinnamon is my favorite spice. So, obviously, I’m excited to share this cinnamon filled recipe with you! Plus, it’s super easy to make, since it all starts with just a simple sugar cookie base. Now, if you’re wondering where the titular “cheesecake” angle comes from, the answer is from an instant pudding mix. Which might sound weird. But adding instant pudding mixes to cookie batter actually helps to keep your cookies inexplicably moist and delicious. The rest of the magic is due to, well, the cinnamon and brown sugar you add to the sugar cookie base. Oh, and the white chocolate chips!

Quick confession: I cheated and used a premade box mix, so my sugar cookie base came together real quick. Now, I know that cheating is bad… but I don’t regret it at all! I’m busy. And if I can work less- but still get an equally good result- I’m gonna do it! In fact, I’ll actually go a step further and encourage you to cheat too! Because if you have to choose between cookies from a box mix or no cookies at all, you HAVE to pick the option with cookies every time. (This is not to discourage anyone from baking from scratch. If you have the time, good for you! Everything always tastes better when it’s homemade. But not having the time to bake from scratch doesn’t mean that you should miss out on this recipe.)

All cheating aside, these really were so good! The cinnamon and brown sugar really added a whole new flavor to what would otherwise be a boring sugar cookie. And the white chocolate chips were that decadent touch that just bumped the recipe from “good” to “wow!”

 17.50 oz Sugar cookie mix
 1 tbsp Brown sugar
 1 tsp Cinnamon
 1 box Cheesecake flavor instant pudding mix
 1 cup White chocolate chips

Preheat the oven to the temperature specified by your sugar cookie recipe. (Mine was at 375 degrees.)

Make the sugar cookie mix according to the directions on the box. Add the cinnamon, brown sugar, and instant pudding mix to the prepared sugar cookie batter. Mix to incorporate. Fold in the white chocolate chips.

Roll the dough into 1 inch balls and space two inches apart on a parchment paper lined cookie sheet. Bake until the edges start to turn brown, then remove from heat. (Again, check the directions on your sugar cookie box to set your timer. My cookies took roughly 8 minutes.)
