Christmas Tree Cookie Stacks

The spirit of Christmas is all about giving. Giving donations to the Salvation Army, presents to loved ones, time to a local soup kitchen. It’s the only month of the year that society promotes selflessness. Asking you to actively think about others and be more gracious with your time, money, and energy. And between giving to others and growing as a person, be sure to give yourself a little treat make these cookies! Shaped like Christmas trees, these cookies epitomize the saying “the more the merrier,” since it is actually three cookies in one! With three sugar cookies of varying size that are held together with generous amounts of vibrant frosting. Decorate with pearl sprinkles and a star on top to complete the effect. So the next time you’re feeling overwhelmed, have a cookie and give yourself a break.

Cookies
 ¾ cup Unsalted butter, room temperature
 1 cup Sugar
 1 Egg
 1 tsp Vanilla
 1 tsp Almond extract
 2 ¼ cups Flour
 1 tsp Baking soda
 ¼ tsp Salt
Frosting
 1 cup Butter
 4 cups Confectioners' sugar
 1 tsp Vanilla
 3 tbsp Milk
 Green food coloring
 3 tbsp Red & White pearl sprinkles
 18 Yellow star sprinkles

Cookies

Preheat the oven to 350 degrees.

Cream butter and sugar together for 3-4 minutes or until light and fluffy. Mix in the egg, vanilla, and almond extract. In a separate bowl, combine the dry ingredients. Add the dry ingredients to the wet ingredients and mix until smooth. The finished dough will be thick and sticky.

Using the 1 teaspoon, the ½ tablespoon, and the tablespoon measures, scoop and roll the dough into three differently sized balls. Make an even number of each size cookie. Place the medium and large cookies together on a cookie sheet lined with parchment paper. Press each cookie so it's slightly flattened and bake for 7-8 minutes or until the center is mostly cooked.

Place the teaspoon sized cookies on a separate cookie sheet lined with parchment paper. Slightly flatten each cookie and bake for 5-6 minutes or until the center looks mostly cooked. Let all of the cookies cool completely.

Frosting

Beat the butter until smooth. Add half of the confectioners' sugar and mix until smooth. Add the vanilla, milk, and remaining sugar; mixing until smooth. Add food coloring until you achieve your desired shade of green. Fill a piping bag with a medium sized star tip with frosting. Take one cookie of each size and start by piping a swirl of frosting onto the largest cookie.

Gently press the medium cookie on top of the frosting and pipe frosting onto the second cookie. Set the smallest cookie on top and frost. Promptly decorate with sprinkles, placing a star on top and pearl sprinkles around the edges. Store in the refrigerator.
