Chocolate Turtle Apple Slices

Fresh fruit and chocolate is ALWAYS a great combination; and this is no exception. Add a drizzle of caramel and a smattering of pecans and you’ve got yourself a winning “lollipop.” With a juicy crunch of fresh apple, sweet chocolate coating, and the crunch of earthy nuts, this is a well rounded sweet treat that earns a merit badge for healthiness. (Even if it’s not healthy in the strictest sense.)

 2 large Fuji apples
 2 cups Chocolate chips
 1 tbsp Coconut oil
 1 cup Caramel candies, melted
 Pecans, chopped

Cut the apples into 1/2 inch thick slices. Either leave the seeds in place (& plan to eat around them) or remove with a knife. Puncture the skin of the apple at one end of the slice and stab with a lollipop stick.

In a medium sized bowl, combine the chocolate chips and coconut oil; microwave until fully melted. Place the prepared apple slices on a wire cooling rack. Spoon the melted chocolate over the apple slices and tap the rack against the table until the chocolate is smooth.

While the chocolate coating is still tacky, drizzle the melted caramel over top of the apple slices and promptly sprinkle with chopped pecans. Allow chocolate to set completely before serving.
